Quick, Healthy & Easy 15-Minute Salmon Recipe

Lemon Garlic Salmon over Steamed Spinach

Why it's good for you:
  • Salmon is rich in Omega-3's, which is said to protect against heart disease, periodontitis, arthritis, and other inflammatory conditions. Omega-3 essential fatty acid's are also immune boosters, which is something important especially during the winter when it seems much easier to get sick. These fatty acids will help protect you against all those germs floating around.
  • Spinach is a great source of Vitamin A, which also helps support your immune system. (One serving of spinach contains 60% of your daily recommended Vitamin A intake.)
 With that being said here is my QUICK and super EASY recipe- only takes about 15 minutes! 




 Ingredients:
  • 2 Fresh Salmon fillets (Fresh cooks faster)
  • Baby spinach (I used Wegman's Fresh Spinach that can steam in the microwave in minutes) 
  • 4 Garlic Cloves Minced
  • 1 1/2 Tablespoon of unsalted butter (can be substituted with apx 1 Tablespoon of olive oil to make it even healthier)
  • Lemon Pepper 
  • 1 lemon/lemon juice
Directions:
  • Season Salmon fillets with lemon pepper on both sides and set aside.
  • Melt butter over medium heat and add minced garlic (how to peel and mince garlic). If you're using olive oil, which is much healthier, use enough oil to just coat the pan. 

  • Place Salmon in pan & cook fillets for about 5 minutes each side- the recommended cooking time for salmon is 10 min per inch of thickness. Cooked salmon should be flaky on the inside and out  





     
  • Steam spinach in the microwave (or any other method) while fillets are cooking. The brand I used cooks on high in the microwave for 2-3 Minutes and then needs to rest for one minute in microwave. 

Place cook fillet on bed of spinach, squeeze a little lemon juice on top and.....Voila! You're done! Doesn't get any faster or easier than that huh?!?
